From what I noticed when I played it (as a Toreador in the Sabbat), diablerie does decrease your humanity by 2. I used console commands to keep it at 6 so I didn't have to worry about the constant frenzy due to low humanity and failure to fully "consume" some spirits when devouring them. I managed to diablerize Jeanette, Isaac, Pisha, Bruno Giovanni and Jesse.
